Unfortunately there's no way to restore it, the only option is to reinstall the MDM web panel.
Note that you cannot delete a configuration unless you delete all devices using that configuration.
So the only case when you occasionally delete the main configuration is the very first start of Headwind MDM for testing purposes. Just re-run the installer and this will revert the web panel settings to defaults.
